Here are some pictures from what I brought out of the garden yesterday.




Stewed Okra and Tomatoes

You can change the amounts to make this for a larger group. This serves two.

Ingredients:

2 cups of chopped okra
20 Roma tomatoes, sliced lengthwise
3 Tbsp of organic butter
2 cups of organic chicken stock
1 garlic clove, minced
Salt and pepper to taste (I like to add some Mrs. Dash)

Method

Place all ingredients into a skillet at high heat, cover and bring to boil. Reduce to simmer and simmer covered for 25 minutes, or until okra is soft and mushy to the touch of a fork.

071109 - Watering

We haven't received much rain lately, so I went out this morning and gave the trees and garden a good drink. The cantaloupes and watermelons are coming in droves, so soon those will fill us with some good satisfying refreshment. Peppers are still coming in very nicely, picked 10 more this morning.

070509 - Pack of Peppers!

Went out to the garden this morning and picked more peppers! Remember the more red they are and the more they "cork" (those little wood like lines in the pepper) the hotter they are getting! If you want the sting but not the super hot part of peppers, avoid the seeds!




070309 - Early Morning Gardening

Went out to the garden early before the heat gets here. Took a basket this time because I knew there would be a lot waiting to be picked, I have been slack on keeping up. Filled the basked right up with squash, cucumbers, okra, tomatoes and even one jalapeno pepper that was a nice red and had some corking on it. Over a gallon of okra today! Can't wait to make squash and pumpkin soups for this winter!

Lo and behold the okra has started to take to growing. Yesterday I cut off at least 30 pieces of okra that were all around 6-7" long! Will post up some pictures of the next batch and throw around our recipe for fried okra (we don't use flour).

Cucumber Dressing

Ingredients:

1/2 cucumber, seeds removed then chopped
1/2 cup whole milk yogurt
2 Tbsp extra virgin olive oil
1/2 tsp chopped garlic
1/4 cup chopped red onion
Salt and pepper to taste

Method:

Put all the ingredients into a food processor or blender (I use a Magic Bullet). Blend together until smooth consistency. Pour onto salad! This makes enough for 2 salads.
